Perfecting the roti dough comes with lots of practice. Frankly speaking, I was never good at this kneading part until few months after my marriage I still couldn’t prepare a puffy poori. Preparing roti or chapati for dinner is our daily ritual. I like to try different varieties of roti or paratha. I try to make it wholesome by adding vegetables and it goes very well with simple plain curd and pickle. You can prepare the dough well in advance and keep it refrigerated in a zip lock bag or Tupperware, use it within 24 hours.
