
Happy 4th Birthday to My Dear Blog!!!
I still can’t believe I made it this far in the blogging world. There have been many ups and down in the journey. However, with continued support from my family, blogger friends and readers, I reached this far and hope to continue in the coming years as well.
I still remember the first day of blogging, my first post on Chicken Kurma with no photographs. I also remember, I used to share 10 recipes per day I dont know If I have the energy to do the same now. Though the recipes number came down, I took more time to learn better ways to take good photographs. I’m basically a slow learner and still learning my ways into food photography. My objective was always been to capture the essence of home cooked food and the picture should make you feel that you are at home.
At this moment, I have a humble request to my readers. I have been trying my best to share the traditional & healthy recipes. If you think there are other traditional recipes which I should try, feel free to provide your comments or shoot an email.
Vegan Carrot Halwa / Healthy Carrot Pudding, a healthy, vegan-friendly and nutritious carrot halwa prepared without sugar. Yes, I have not added even oil / ghee to stir grated carrot. This recipes is super easy and doesn’t require much effort other than grating carrot and extracting fresh coconut milk. It is always better to use fresh coconut milk instead of canned ones. Jaggery slightly changes the taste of halwa but sure gives rich taste to the dish. Enjoy this halwa with gulab jamun or a cup of ice cream.
Whenever, there is red delhi carrot in the market, I get so excited and only one thing comes in my mind ie., Halwa. When we were in Northern Parts of India, my mom would often make carrot halwa with this juicy delhi carrot. But after coming to Chennai, I totally missed this carrot variety as the carrot we get here look so dry. Halwa prepared from that carrot doesn’t taste as delicious as with delhi carrot. I have always tried carrot halwa with milk and sugar. Coconut milk gives nutty flavor and you will not get disappointed with its taste. It is hard to find out that it is made from coconut milk. Dry Nuts like almonds, pistachio and cashew nuts can be used for garnishing.


- • 200 gms (or) 1 & 1/2 cup grated sweet carrot
- • 1 tsp cardamom powder
- • 1 cup coconut milk
- • 3/4 cup powdered palm jaggery
- • dry nuts - to garnish
- Heat a pan or kadai. Add grated carrot and switch to low-medium flame. Stir well for 5 mins till all the moisture is completely absorbed from carrot. Add coconut milk and cardamom powder.
- Cook for another 5 mins till milk level is reduced. Add powdered jaggery and cook for 5 more minutes or till the mixture starts leaving the sides of the pan. Garnish with chopped nuts and serve hot / cold.
